Sałatka z soczewicą i wyjątkowym serem halloumi.

Jego teksturze naprawdę trudno się oprzeć. Choć tu wisienką na torcie jest marynowana, aromatyczna cebula. Na drugi dzień przechowaj ją w osobnym pojemniku. Szpinak możesz zastąpić roszponką albo rukolą, pestki dyni – pestkami słonecznika, a zamiast harissy dodać trochę ostrej mielonej papryki. Soczewica zielona 100 g

Buraki (gotowane, pieczone) 400 g

Rzodkiewki pęczek

Ser halloumi 225 g

Oliwa 2 łyżki

Natka posiekana 1 łyżka

Pestki dyni (uprażone) 1 łyżka

Sok z cytryny 2 łyżki

Świeżo mielony pieprz

Harrisa szczypta

Cebula czerwona średnia 1 szt.

Do cebuli: goździki 6-7 szt., pieprz w ziarnach 2-3 szt., kmin rzymski 1/2 łyżeczki, kawałek kory cynamonu, syrop klonowy 2 łyżki, ocet ryżowy lub sok z cytryny 3 łyżki

Sałatka z soczewicą – przygotowanie:

  1. Ugotuj i odcedź soczewicę (15 minut). Ser halloumi osącz na papierowym ręczniku. Pokrój na plastry o grubości 1 cm.
  2. Przygotuj marynowaną cebulę. Obraną czerwoną cebulę potnij na cienkie piórka. Włóż do miski, dodaj goździki, pieprz, kmin rzymski, korę cynamonu, wlej syrop klonowy i ocet lub sok z cytryny. Wymieszaj, odstaw na co najmniej 20 minut.
  3. Rzodkiewki potnij na cienkie plasterki, buraki na słupki. Wrzuć do miski, wsyp soczewicę, natkę i pestki dyni, dorzuć szpinak. Przypraw harissą, dodaj sok z cytryny i oliwę (zostaw 1/2 łyżki do smażenia halloumi).
  4. Rozgrzej patelnię (grillową lub zwykłą), natłuść oliwą, ułóż halloumi, smaż po 2 minuty z każdej strony.
  5. Sałatkę podziel na porcje, dodaj plasterki sera. Udekoruj cebulą.

Lentil and Halloumi Salad

A simple salad with lentils and exceptional halloumi cheese. Its texture is truly irresistible. However, the icing on the cake is the marinated, aromatic onion. Store it in a separate container for the next day. You can replace the spinach with arugula or rocket, the pumpkin seeds with sunflower seeds, and instead of harissa, add a little ground hot paprika. The recipe comes from our book „Praktykulinarni Vegetarian. Today for Dinner, Tomorrow for the Lunchbox”.

Green lentils 100g

Beetroot (boiled, roasted) 400g

Radishes (bunch)

Halloumi cheese 225g

Olive oil 2 tablespoons

Chopped parsley 1 tablespoon

Pumpkin seeds (roasted) 1 tablespoon

Lemon juice 2 tablespoons

Freshly ground pepper

A pinch of harissa

Medium red onion

For the onion: 6-7 cloves, 2-3 peppercorns, 1/2 teaspoon cumin, a piece of cinnamon bark, 2 tablespoons maple syrup, 3 tablespoons rice vinegar or lemon juice

 

  1. Boil and drain the lentils (15 minutes). Drain the halloumi cheese on paper towels and cut into 1 cm thick slices.
  2. Prepare the pickled onion. Thinly slice the peeled red onion. Place in a bowl, add the cloves, peppercorns, cumin, cinnamon sticks, maple syrup, and vinegar or lemon juice. Mix well and let sit for at least 20 minutes.
  3. Thinly slice the radishes and julienne the beetroot. Place in a bowl, add the lentils, parsley, and pumpkin seeds, and add the spinach. Season with harissa, lemon juice, and olive oil (reserve 1/2 tablespoon for frying the halloumi).
  4. Heat a pan (grill or regular pan), grease with olive oil, add the halloumi, and fry for 2 minutes on each side. Divide the salad into portions, add cheese slices, and garnish with onion.
